Pan-seared scallops on silky cauliflower puree with crispy pancetta
Ingredients
- 12large scallops
- 1 headcauliflower
- 100mlcream
- 4 tbspbutter
- 100gpancetta
- 2 tbspchives
Instructions
- Make cauliflower puree with cream and butter
- Crisp pancetta
- Pat scallops dry and season
- Sear in hot pan 2 minutes per side
- Plate on puree with pancetta
