  • 12large scallops
  • 1 headcauliflower
  • 100mlcream
  • 4 tbspbutter
  • 100gpancetta
  • 2 tbspchives

Instructions

  1. Make cauliflower puree with cream and butter
  2. Crisp pancetta
  3. Pat scallops dry and season
  4. Sear in hot pan 2 minutes per side
  5. Plate on puree with pancetta
