Silky vanilla custard with caramelized sugar crust
Ingredients
- 500mlheavy cream
- 1vanilla bean
- 6egg yolks
- 100gsugar
- 6 tbspsugar for topping
Instructions
- Infuse cream with vanilla
- Whisk yolks and sugar
- Combine and strain
- Bake in water bath
- Chill thoroughly
- Torch sugar before serving
