  • 500mlheavy cream
  • 1vanilla bean
  • 6egg yolks
  • 100gsugar
  • 6 tbspsugar for topping

Instructions

  1. Infuse cream with vanilla
  2. Whisk yolks and sugar
  3. Combine and strain
  4. Bake in water bath
  5. Chill thoroughly
  6. Torch sugar before serving

  • Torch sugar just before serving for best crack
