Beef Bourguignon
Julia Child's beloved interpretation of this Burgundian peasant stew elevated French country cooking to international fame. Cubes of well-marbled beef chuck are slowly braised in young red Burgundy wine until fork-tender, surrounded by glazed pearl onions, sauteed mushrooms and crispy lardons. The sauce, reduced to a silky, wine-dark elixir, carries notes of thyme, bay and the unmistakable terroir of Burgundy.
