  • 4 portionsbeef tenderloin
  • 500gpuff pastry
  • 400gmushrooms
  • 2shallots
  • 8 slicesprosciutto
  • 2 tbspDijon mustard
  • 1egg

Instructions

  1. Sear beef and coat with mustard
  2. Make mushroom duxelles
  3. Wrap in prosciutto and duxelles
  4. Encase in puff pastry
  5. Bake until golden with 125F internal temp
