Classic beef Wellington with mushroom duxelles in puff pastry
Ingredients
- 4 portionsbeef tenderloin
- 500gpuff pastry
- 400gmushrooms
- 2shallots
- 8 slicesprosciutto
- 2 tbspDijon mustard
- 1egg
Instructions
- Sear beef and coat with mustard
- Make mushroom duxelles
- Wrap in prosciutto and duxelles
- Encase in puff pastry
- Bake until golden with 125F internal temp
