  • 4duck legs
  • 500gduck fat
  • 200mlorange juice
  • 2 orangesorange zest
  • 4 sprigsthyme
  • 4 clovesgarlic
  • 2 tbspsea salt

Instructions

  1. Cure duck legs with salt and herbs overnight
  2. Slow cook in duck fat for 3 hours
  3. Crisp skin under broiler
  4. Make orange glaze reduction
  5. Plate with glaze and fresh herbs
