Classic French duck confit with a citrus orange glaze
Ingredients
- 4duck legs
- 500gduck fat
- 200mlorange juice
- 2 orangesorange zest
- 4 sprigsthyme
- 4 clovesgarlic
- 2 tbspsea salt
Instructions
- Cure duck legs with salt and herbs overnight
- Slow cook in duck fat for 3 hours
- Crisp skin under broiler
- Make orange glaze reduction
- Plate with glaze and fresh herbs
