Osso Buco
Milan's gift to the world of slow-cooked excellence. Thick-cut veal shanks, sawn cross-wise to reveal their prized marrow bones, are braised in a bath of white wine, tomatoes and aromatic vegetables until the meat surrenders from the bone. The traditional gremolata garnish - a vibrant mixture of lemon zest, garlic and parsley - cuts through the richness with its bright, fresh notes. Traditionally served with risotto alla Milanese.
