Braised veal shanks with gremolata in the traditional Milanese style

  • 4veal shanks
  • 200mlwhite wine
  • 500mlveal stock
  • 2carrots
  • 2 stalkscelery
  • 1onion
  • 400gtomatoes
  • 1 lemonlemon zest
  • bunchparsley
  • 3 clovesgarlic

Instructions

  1. Season and dredge veal shanks
  2. Brown on all sides
  3. Sauté mirepoix
  4. Add wine and reduce
  5. Braise with stock for 2 hours
  6. Prepare gremolata
  7. Serve with risotto
