Braised veal shanks with gremolata in the traditional Milanese style
Ingredients
- 4veal shanks
- 200mlwhite wine
- 500mlveal stock
- 2carrots
- 2 stalkscelery
- 1onion
- 400gtomatoes
- 1 lemonlemon zest
- bunchparsley
- 3 clovesgarlic
Instructions
- Season and dredge veal shanks
- Brown on all sides
- Sauté mirepoix
- Add wine and reduce
- Braise with stock for 2 hours
- Prepare gremolata
- Serve with risotto
