Creamy Mushroom Risotto
Rich and creamy Italian risotto with mixed mushrooms and parmesan
Ingredients
- 300garborio rice
- 400gmixed mushrooms
- 1Lvegetable stock
- 1onion
- 2 clovesgarlic
- 150mlwhite wine
- 80gparmesan cheese
- 3 tbspbutter
Instructions
- Keep stock warm in a separate pan
- Sauté mushrooms until golden, set aside
- Sauté onion and garlic in butter
- Add rice and toast for 2 minutes
- Add wine and stir until absorbed
- Add stock one ladle at a time, stirring
- Continue for 18-20 minutes until creamy
- Stir in mushrooms and parmesan
