Creamy Mushroom Risotto

Rich and creamy Italian risotto with mixed mushrooms and parmesan

Ingredients

  • 300garborio rice
  • 400gmixed mushrooms
  • 1Lvegetable stock
  • 1onion
  • 2 clovesgarlic
  • 150mlwhite wine
  • 80gparmesan cheese
  • 3 tbspbutter

Instructions

  1. Keep stock warm in a separate pan
  2. Sauté mushrooms until golden, set aside
  3. Sauté onion and garlic in butter
  4. Add rice and toast for 2 minutes
  5. Add wine and stir until absorbed
  6. Add stock one ladle at a time, stirring
  7. Continue for 18-20 minutes until creamy
  8. Stir in mushrooms and parmesan
