Vegetable Lasagna
Layered vegetarian lasagna with zucchini, spinach, and ricotta
Ingredients
- 12lasagna sheets
- 2 largezucchini
- 300gspinach
- 500gricotta
- 700mlmarinara sauce
- 200gmozzarella cheese
- 50gparmesan
Instructions
- Preheat oven to 180C
- Grill zucchini slices until tender
- Wilt spinach and drain well
- Mix ricotta with herbs and egg
- Layer sauce, pasta, vegetables, ricotta
- Repeat layers
- Top with mozzarella and parmesan
- Bake 45 minutes until golden

- Let rest 10 minutes before cutting for cleaner slices
