Layered vegetarian lasagna with zucchini, spinach, and ricotta

Ingredients

  • 12lasagna sheets
  • 2 largezucchini
  • 300gspinach
  • 500gricotta
  • 700mlmarinara sauce
  • 200gmozzarella cheese
  • 50gparmesan

Instructions

  1. Preheat oven to 180C
  2. Grill zucchini slices until tender
  3. Wilt spinach and drain well
  4. Mix ricotta with herbs and egg
  5. Layer sauce, pasta, vegetables, ricotta
  6. Repeat layers
  7. Top with mozzarella and parmesan
  8. Bake 45 minutes until golden

Tips

  • Let rest 10 minutes before cutting for cleaner slices
